Eating the plant-based and low-fat vegan way
A few months ago we were downtown and stopped at our local PCC store for some lunch. I honestly just wanted to get a green juice but once we took a peek at their hot bar neither of us could resist this soup. Love at first bite. It is a tiny bit spicy and sweet and curried up of course. Absolutely perfection in a bowl. Ours is slightly less fatty than theirs since I subbed our half the peanut butter for the less fat PB2 and we used the Light coconut milk from TJs. It stilled came out as good as theirs in our opinions. Those mushrooms are just to die for. They remind us of little bits of meat or something. I don’t know, kinda hard to explain. Seriously though, if you ever try something on my recommendation then this should be the one.
Okay, so the goal was to start doing more things for my sanity and to keep me feeling like I have a purpose and one of those things was to meditate daily and it’s been 5 days at least that I failed in this area. For some reason it’s just not making it’s way into my day. I even got a new app to get more out of it and still haven’t been motivated to do it. So again I go at it tomorrow. I just need someone to help keep me on track. So maybe I should set a fitbit alarm that tells me to sit my butt DOWN and do it. IDK. Just gotta give it a really good try and see what happens.
